What, overengineering? We used Excalidraw and Etherpad to brainstorm, but it was a good old-fashioned pen & paper that helped us to focus the ideas and agree on our deliverables!
Did you say Tesseract? Your frustrations with OCR/NER are echoed in digitalization efforts everywhere. Projects like awesome-ocr could help to discover and keep track of tools & methods.
